Step One
Prepare Your Glass and Garnish
First, let’s prepare the glass and the cherry garnish. You’ll want to use a double old-fashioned glass for this spirit-forward cocktail. Take a large, fresh black cherry and dip it in your Demerara syrup. Place this at the bottom of the glass. For a truly dramatic flair, you can add a small splash of Tequila Comisario Añejo over the cherry and carefully light it. This infuses a subtle smoky sweetness that perfectly sets the stage.
Step Two
Build the Cocktail
Now, add the rest of your ingredients directly into the glass. Since this is a stirred cocktail, we’ll build it right in the serving glass. Pour in Tequila Comisario Añejo, followed by the rich orange shrub, a measure of Campari, and finally, a few dashes of chocolate bitters. The order isn’t critical here, as the next step will blend everything perfectly.
Step Three
The Stir
Next, add your ice. Use a large ice rectangle that fits snugly in the glass. This is important because a single, large block of ice melts much slower than smaller cubes, ensuring a gradual dilution that won’t water down your drink. Now, stir gently for 20-30 seconds. This is the Grinder’s calm, cool moment—take your time to chill the ingredients and achieve the perfect balance of flavor and temperature.
Step Four
The Final Flourish
The garnish is a key part of this cocktail’s experience. Take a slice of orange peel and, using a match or lighter, gently warm the outside of the peel to release its oils. Carefully squeeze the peel over the drink to “flame” the oils, allowing them to mist the surface of the cocktail. This adds a beautiful aromatic dimension. Drop the expressed peel into the glass and, as a final touch, add a single drop of orange oil onto the surface of the drink. This creates a beautiful visual and aromatic layer.
