Each agave plant is tested before harvesting and being brought to the brick oven to be roasted, jimadors strip the leaves from the pina at the field to transport each fruit immediately and leaving the leaves to nourish the soil in the field.
Slow Roasting
Comisario® agave is slow roasted
We use two methods to slow cook our agave without burning the fruit sugars, we roast them at our proprietary temperatures two ways to enhance the peppery flavor of our los altos freshly harvested blue weber agave.
