What is Cinco De Mayo Really About?
Cinco De Mayo - the victory that showed us all what is possible with bravery, resilience

Cinco de Mayo is more than a party. May 5, 1862, a victory that redefined the spirit of humanity.

A smaller force stood against a global power and refused to yield. That moment echoes through time, a moment in history that proves what is possible. When we rise, refusing to surrender to others expectations of us.

What is possible in rising above what is expected.  A victory won through bravery, resilience and defying all we thought possible.

Why it endures?  Victory is never granted, it is earned.

It reminds us that strength is not always measured in scale. It is measured in conviction.

Comisario Collectors Edition Blanco - Cinco De Mayo

Cinco de Mayo became a symbol of;

Defiance against impossible odds.

Unity in moments of uncertainty.

Bravery over circumstance.

Power of possibilities.

Underestimating you was their mistake
Unstoppable when underestimated

For those who understand its origins, the day carries a deeper resonance. It is not simply festive. It is meaningful.

For us, it is an opportunity to unite as a community and commit to overcoming obstacles even when odds are stacked against us.  Together, we prevail as believers in craft, passion and never giving up.

Mole Poblano

Mole poblano is not just a recipe. It’s a reflection of Puebla itself. Layered, complex, patient.

Recipes built from many elements that, on their own, seem unlikely to work together yet, with patience they found a way to become sensational.

Ingredients

  • Dried chiles (ancho, pasilla, mulato)
  • Tomato + Tomatillo
  • Onion, garlic
  • Almonds, peanuts, sesame seeds
  • Raisins
  • Mexican Chocolate (cacao)
  • Cinnamon, clove, cumin

How to Make

Step One

Toast & Build the Base
Lightly toast the dried chiles, seeds, and nuts. This is where depth begins. Careful not to burn, we want to toast and release the new flavor notes.

Rehydrate & Blend
Soak toasted chiles seeds and nuts in warm water, then blend with tomatoes, aromatics, spices, and stock into a thick paste.

Slow Cook
Cook the paste slowly in a heavy pan, stirring constantly. Add chocolate toward the end. Let it melt into the sauce, not dominate it.

Refine
Adjust with stock until the texture is silk-like. It should coat the back of a spoon.

Finish
Serve over roasted or poached chicken for dinner, huevos ranchero for breakfast or anything else you can imagine. Finish with toasted sesame seeds. Pair with Comisario Puebla Moment Mixology Recipe or sip neat, try it with Comisario Blanco or Comisario Añejo.
