Mole Poblano
Mole poblano is not just a recipe. It’s a reflection of Puebla itself. Layered, complex, patient.
Recipes built from many elements that, on their own, seem unlikely to work together yet, with patience they found a way to become sensational.
Ingredients
- Dried chiles (ancho, pasilla, mulato)
- Tomato + Tomatillo
- Onion, garlic
- Almonds, peanuts, sesame seeds
- Raisins
- Mexican Chocolate (cacao)
- Cinnamon, clove, cumin
How to Make
Step One
Toast & Build the Base
Lightly toast the dried chiles, seeds, and nuts. This is where depth begins. Careful not to burn, we want to toast and release the new flavor notes.
Step Two
Rehydrate & Blend
Soak toasted chiles seeds and nuts in warm water, then blend with tomatoes, aromatics, spices, and stock into a thick paste.
Step Three
Slow Cook
Cook the paste slowly in a heavy pan, stirring constantly. Add chocolate toward the end. Let it melt into the sauce, not dominate it.
Step Four
Refine
Adjust with stock until the texture is silk-like. It should coat the back of a spoon.
Step Five
Finish
